Proper baked beans for super heroes

You may have been expecting something delicate and floral since it is Mother’s Day today but instead I’ve opted for something wholesome and hearty. Beans on toast is such homely comfort food. I remember having the traditional version (Heinz baked beans ontoasted white bread) as a child and since I am not spending today with my Mum, I wanted something warming to remind me of home (plus it is also a pretty good cure for those who are hanging).

The title doesn’t quite do this post justice. These are in fact rich and flavourful slow-cooked beans on chunky sourdough bread with crispy smoked streaky bacon and a fried egg with an oozing yolk. That is much better.


The beans aren’t actually baked but slow-cooked in a pot until the sauce reduces down and becomes sweet and sticky. You can tell from the colour just how rich and delicious they are. It does take a while to make the beans but the work involved is fairly minimal so they are worth the time invested and they can be made in advance and re-heated if you fancy a long lie.
